Make your own clean, probiotic cream cheese

cheese-231-md109290_horizOver in England, the shopping is different. It's somehow less convenient and more convenient at the same time. I love the plethora of farm shops on the side of the road that use the honor system for buying veg. Take what you want and drop your money in the box. I love that even the cheap, not certified anything eggs have a beautiful orange yolk, proving themselves to be proud offspring from clean, healthy chickens. And I love the look of horror displayed on the face of 5th generation farmers when I ask if they use any pesticides or GMO's. Of course they don't. Why would I even ask?When it comes to more of the specialty foods however, there are only a few shops in town to choose from. One thing I was desperately missing for a while was clean cream cheese. My favorite breakfast just happens to be cream cheese on toasted, organic sourdough bread, topped with carrot sauerkraut. It's divine! But I just can't bear the thought of using  hormone, antibiotic doused Philledelphia cream cheese.Lucky for me, I am pretty qualified at making anything from scratch so as I was racking my brain to find a simple way (in hindsight, pinterest would have been quite helpful), I found a loop hole. Strained, organic yogurt. Organic yogurt is quite cheap over here so I bought a tub to test my theory and it was wonderful! Not only does it taste amazing, but because it is made from yogurt, it's full of probiotics!Ingredients:• Tea towel• Metal strainer• Large glass bowl• 2-4 cups organic yogurtDirections:1 Place metal strainer over glass bowl and line strainer with tea towel2 Pour yogurt onto the towel-lined strainer3 Let sit in refrigerator overnight4 Whats left in the strainer is your cream cheese.5 Place it in new container and keep refrigerated6 Don't throw away the liquid! It's whey, which can be used in sauerkraut, and soaking grains!Cream cheese sounds like the least healthy food you could possibly eat in our food phobic society, but forget what you've heard. It's full of saturated fat which supports the thyroid gland, protein and probiotics making it an easy to digest, metabolism-boosting superfood!
